Cajun Norwegian Salmon Tacos with Mango Salsa

Ingredients
- 480 g - Norwegian salmon fillet
- 1 tbsp - cajun spices
- 1 tbsp - vegetable oil
- 8 - taco shells
- 160 - yoghurt, plain
- - iceberg lettuce
- - lime
Accompaniment
- 1 - mango
- 100 g - onion, red
- 1 - lime juice
- 1 tbsp - olive oil, extra virgin
- 1 - handful of coriander leaves, fresh
- 1 - chili pepper, red
- - salt and pepper

Instructions
- Dust the salmon fillets in Cajun spice then cook over a hot, oiled griddle for 8-10 minutes until slightly blackened and cooked through.
- Combine all the salsa ingredients in a small bowl and season to taste. Add more chilli if you like the heat!
- Warm the taco shells in the oven, according to pack instructions. Gently flake the salmon and serve with the tacos, mango salsa, yogurt and lime wedges.
