Cajun Norwegian Salmon Tacos with Mango Salsa

  • 480 g - Norwegian salmon fillet
  • 1 tbsp - cajun spices
  • 1 tbsp - vegetable oil
  • 8 - taco shells
  • 160 - yoghurt, plain
  • - iceberg lettuce
  • - lime
Accompaniment
  • 1 - mango
  • 100 g - onion, red
  • 1 - lime juice
  • 1 tbsp - olive oil, extra virgin
  • 1 - handful of coriander leaves, fresh
  • 1 - chili pepper, red
  • - salt and pepper

Cajun Norwegian Salmon Tacos with Mango Salsa
Instructions
  1. Dust the salmon fillets in Cajun spice then cook over a hot, oiled griddle for 8-10 minutes until slightly blackened and cooked through.
  2. Combine all the salsa ingredients in a small bowl and season to taste. Add more chilli if you like the heat!
  3. Warm the taco shells in the oven, according to pack instructions. Gently flake the salmon and serve with the tacos, mango salsa, yogurt and lime wedges.
